Glazed Banana Nut Cake

Mashed bananas bring a fabulous flavor, and walnuts add crunch to a white sheet cake glazed with vanilla icing.

Banana extract

Walnuts, chopped

Batter
  1. Pour half of the water into mixer bowl; add bananas.
  2. Mix using paddle attachment on low speed 1 minute until bananas are mashed.
  3. Add cake mix; mix on medium speed 2 minutes.
  4. Add remaining water gradually, mixing on low speed.
  5. Stop mixer, scrape bowl and paddle; add remaining ingredients.
  6. Mix on low speed additional 2 minutes and deposit into greased and parchment-lined full sheet pan.
  7. Bake as directed below and allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 15 minutes of baking.
Glaze
  1. Place icing in double boiler, stirring constantly over low heat until icing flows freely from end of spoon.
  2. Drizzle evenly over top of cake and place walnut half onto center of each portion.
