I’ve been seeing some trends in schools that work with biscuits – white or whole-grain rich. I saw a couple of different "bowl” ideas that I particularly liked. One was BBQ Mac and Cheese at Parkview High School, part of the Gwinnett County Public Schools in Georgia. I was a little confused when I saw the menu listing. I thought somehow the macaroni and cheese had BBQ in it. Come to find out BBQ pork was paired with mac and cheese. That district has the whole grain waiver, so they serve our Pillsbury Southern Style Biscuit on the side. Here is a photo of the menu item on their serving line. I had to take the photo quickly because these entrees were flying off the serving line.
When I was visiting John A. Ferguson Senior High in Miami Dade County, I saw this mashed potato bowl which was definitely inspired by KFC. Their students loved that lunch offering. Of course, I can’t help but think it would’ve been even better with a Pillsbury biscuit – white or whole grain-rich!
And finally, I’ve been working with San Diego Unified schools on some Brunch for Lunch ideas. Some students have school lunch as early as 10:15 so brunch and breakfast items are understandably popular.
Below are three ideas you could try with your students.
BBQ Mac and Cheese, Garlic Roasted Green Beans and the Pillsbury Biscuit Whole Grain-rich Biscuit. I first had these delicious Garlic Roasted Green Beans at the School of Engineering and Arts, which is part of the Robbinsdale, MN school district and thought they rounded out this menu nicely.
Popcorn Chicken, Mashed Potatoes and Gravy and Corn and of course, a Pillsbury Biscuit Whole Grain-rich biscuit. A sprinkle of cheddar cheese is a nice finishing touch for this dish.
Scrambled Eggs, O’Brien Potatoes, Sausage Patty and Pillsbury Whole Grain-rich Biscuit make this a great lunch entrée.
