Almond Shortbread Cookies

Crumbly, buttery shortbread is amazing with crowd-favorite almond as a simple addition.

INGREDIENT

Butter, unsalted, softened
1 lb
2 cups
Almond extract
1 oz
2 Tbsp
Sugar, if desired
  1. Mix butter, extract and cake mix in mixer bowl using paddle attachment on low speed until well combined (approx. 3 minutes).
  2. Divide dough into 6 (1 lb) pieces; roll each piece into 6 x 10 x 1/2-inch rectangle and prick with fork.
  3. Cut each rectangle into 12 shortbread fingers 1/2-inch wide; cut those fingers in half again to get 3 x 3/4-inch fingers (144 total).
  4. Place cookies on parchment-lined sheet pans and sprinkle lightly with sugar.
  5. Bake until golden brown as directed below and allow to cool 20 minutes before serving.
