Baked Peaches and Sweet Potatoes with Whole Grain-Rich Crumble Topping

Combining peaches and sweet potatoes with a brown sugar topping works well as a warm breakfast or a side dish served with ham.

Diced peaches, canned in fruit juice

Pumpkin pie spice

Brown sugar, packed

Butter, unsalted, small dice

  1. Dice drained sweet potatoes and place in a full steam table pan (12 x 20 x 2 1/2-inch).
  2. Add peaches and the liquid and 1/2 of the pumpkin pie spice; stir together.
  3. Sprinkle on 1/2 box of muffin mix and remaining pumpkin pie spice; fold but DO NOT completely stir all together.
  4. Sprinkle brown sugar and scatter diced butter evenly over the cake mix.
  5. Bake as directed below and serve warm.

  • Swap cinnamon for pumpkin pie spice if desired. Serve for breakfast or lunch with sliced turkey or ham.
