Carrot Ginger Cooler

Give your students a protein boost with yogurt-based Garden Coolers! These delicious smoothies are perfect way to use excess produce, and give students a fun alternative for their daily fruits and veggies.

Servings: 16 servings (1 serving = 1 - 10 oz cooler)

Carrots, diced, cooked, chilled

Apple juice, unsweetened, chilled

Ginger, dried, ground

  1. Add carrots and 2 cups apple juice to a large capacity blender or food processor (prepare in batches as needed).
  2. Blend on high speed for 1 minute; stop blender and scrape sides.
  3. Continue blending until mixture is smooth; transfer to 2 gallon or larger container.
  4. Add yogurt and ginger; whisk until well-combined.
  5. Add remaining 6 cups apple juice and whisk until fully incorporated.
  6. Pour 10 oz into serving cups and cover; serve immediately or refrigerate until serving.

  • Freeze portions, then hold under refrigeration overnight for a slushy consistency at service if desired. Serve product within 72 hours of preparation.
