Chicago-Style Deep Dish Pizza

Add variety to your menu without increasing food costs by utilizing Gold Medal™ All Trumps™ pizza dough as the base for a Chicago-style pizza that's loaded with cheese, sauce and pepperoni.

Mozzarella cheese, sliced

Pepperoni, sliced

Pizza sauce

Oregano, dried
1 tsp
Parmesan cheese, grated

Prep
  1. Spray sheet pan or dough box with pan spray then add frozen dough ball and spray top also; cover and refrigerate overnight or 3-5 hours at room temperature.
  2. Place dough ball in center of sprayed 10-inch round, deep dish pan; pull dough up the sides of the pan.
Assembly
  1. Cover dough with sliced mozzarella cheese then add pepperoni evenly.
  2. Spoon pizza sauce over top and spread evenly; top with oregano and parmesan cheese.
  3. Bake as directed and allow to cool for 5 minutes before removing from pan to slice.

*Rotate pans baked in convection oven one-half turn (180°F) after 9 minutes of baking.

  • If dough resists holding shape up the side of pan, cover with towel and allow to rest 5-10 minutes before trying again.

  • For deeper dish option, allow dough to proof in pan for at least 1 hour.

  • Keep moisture in mind! Ingredients with a higher moisture content (sauce, peppers, spinach, etc) should be layered on top of the sliced cheese to ensure your pie doesn't have a soggy crust.
