Chocolate Croissant Truffle Bread Pudding

This rich, chocolatey bread pudding uses croissants for that extra flaky-ness and coffee liqueur for an extra special treat.

Prep
  1. Bake croissants as indicated on package; allow to cool at least 1 hour.
  2. Cut baked croissants into approx. 1/2-3/4-inch cubes.
Custard
  1. Whisk together milk, eggs, granulated sugar, brown sugar, liqueur, cream, cocoa powder, vanilla extract, almond extract and cinnamon in large bowl until sugar is dissolved.
  2. Cover and refrigerate for Assembly.
Assembly
  1. Place croissant pieces into sprayed 1/2 sheet pan; sprinkle with chocolate pieces.
  2. Pour Custard mixture over croissants, stirring gently as needed then cover and refrigerate for at least 1 hour.
  3. Gently stir to redistribute liquid; bake as directed until knife comes out clean and serve warm or cold.

*Rotate pans baked in convection oven one-half turn (180°) after 10 minutes of baking.

  • Use leftover croissants for this recipe to minimize waste. Substitute frozen raspberries or chopped cherries for the chocolate chips for variety. Note nutrition information will change. Try different liqueurs like Irish cream or amaretto, or even your favorite after dinner brandy.
