Double Lemon Poppy Seed Coffee Cake

Lemon pie filling, prepared

  1. Mix water, extract, zest and poppy seed in mixing bowl.
  2. Add muffin mix, and mix with whisk or rubber spatula until smooth. Do not overmix.
  3. Pour total amount of batter into greased full sheet pan and spread evenly.
  4. Fill pastry bag with lemon filling and pipe rows one inch apart (lengthwise) onto muffin batter.
  5. Drag knife lightly through filling and batter (vertically) alternating back and forth to form decorative pattern.
