Fruit and Nut Puff Pudding

In an updated cousin to bread pudding, puff pastry pieces are folded into a creamy mixture with raisins, almonds, coconut and pecans.

Heavy cream

Granulated sugar

Vanilla extract
1/2 tsp
Lemon zest
2 Tbsp
Raisins
5.50 oz
1 cup
Pecan pieces
3 oz
2/3 cup
Almonds, sliced
2 oz
2/3 cup
Shredded coconut
2 oz
2/3 cup
Prep
  1. Place frozen puff pastry on parchment-lined sheet pan.
  2. Bake in 325°F Convection Oven for 30-40 minutes until golden brown.
  3. Allow to cool then break into bite-sized pieces and place in greased 2-inch deep half hotel pan.
Assembly
  1. Heat milk, cream, sugar, vanilla extract and lemon zest to boiling in saucepan over medium heat, stirring frequently.
  2. Remove mixture from heat and pour over puff pieces; allow to stand for 5 minutes.
  3. Add raisins, pecans, almonds and coconut; toss gently until well mixed.
  4. Bake as directed below until flaky and golden brown; serve warm.
