Gluten-Free Curried Kale Chicken Quinoa Salad

Spicy-sweet ginger-curry yogurt dressing is the perfect complement to a chicken and quinoa main-dish foodservice salad.

Celery, fresh, diced

Red onions, diced

Kale, fresh, shredded

White quinoa, cooked

Diced chicken, cooked
2 lb 8.00 oz

  1. Toast almonds in oven set at 350°F for 5 to 7 minutes or until light brown; cool and set aside.
  2. Drain 4 cups juice from pineapple tidbits and add to large mixing bowl with yogurt, curry, ginger and brown sugar; whisk until well blended.
  3. Fold in pineapple tidbits, raisins, celery, onion and toasted almonds; add kale, quinoa and chicken.
  4. Mix well and refrigerate several hours or overnight; serve chilled.
