Move over, breadcrumbs. Stuffed peppers go gluten-free with Cheerios™ cereal as a super substitute.

Assembly
  1. Place cereal in bowl of food processor; grind approx. 30 seconds or until finely ground.
  2. Soak cereal in coconut milk for 10 minutes. Add rest of ingredients, except peppers, to the stuffing mixture and stir until well mixed.
  3. Cut a small slice off of the bottom of pepper to make it stable.
  4. Stuff 4 oz of the filling mixture into each pepper. Place stuffed peppers in 2-inch hotel pan and cover with foil and bake.

*Rotate pans baked in convection oven one-half turn (180°) after 17 minutes of baking.
Sauce
  1. Sauté all ingredients, except tomatoes and cilantro, in a large sauce pan on medium heat until slightly brown.
  2. Add diced tomatoes and tomato sauce. Simmer for 40 minutes on low heat.
  3. Add cilantro and place 1.5 oz sauce on a stuffed pepper.
