Gold Medal™ Thimble Cakes

Prepare cupcakes and bake, then flip them upside down and cover entirely with fudgy icing!

Water, cool approx. 72°F
3 lb 8.00 oz

  1. Spray a 24 cup Jumbo muffin pan generously with non-stick spray.
  2. Mix cake batter according to directions on the box.
  3. Deposit cake batter into each muffin pan using a #12 scoop.
  4. Line top of muffin pan with parchment paper; place a half sheet baking pan on top of muffin pan and bake as directed below.

*Rotate pans baked in convection oven one-half turn (180°) after 8 minutes of baking.
Finishing
  1. Cool for 5-10 minutes before removing cakes (run a thin metal spatula around sides of each cake and gently lifting out).
  2. Place on a sheet pan, wider side down and allow to cool completely.
  3. Heat icing in microwave until melted; dip thimble cakes into melted icing to completely coat.
  4. Place on sheet pan and allow icing to set before serving.

  • Tip: Cakes can also be iced by putting them on a screen in a sheet pan and ladling the melted icing over each cake.
