Greek Yogurt Pancakes

Add oats, flax seed and Greek honey vanilla yogurt to whole grain pancake mix for a hearty and scrumptious pancake.

  1. Combine oats and seeds in food processor; blend for 30 seconds.
  2. Add yogurt, water, pancake mix and oats/seeds to mixing bowl fitted with paddle attachment.
  3. Mix on low speed for 30 seconds; stop mixer, scrape bowl and paddle with rubber spatula.
  4. Mix an additional 30 seconds or until batter is moistened; allow batter to rest for 30 minutes to hydrate before cooking pancakes.
  5. Deposit a #16 scoop (2 oz) onto pre-sprayed or oiled griddle, preheated to 375°F.
  6. Cook 1-2 minutes per side and serve.

  • Tip: Make batter in advance, cover and refrigerate until ready to use. Add water or yogurt to thin if necessary.
