Honey-Glazed Bacon Croissant BLT

Hop on the sweet umami trend with this elevated twist on a classic. Roasting the tomatoes brings out both sweet and earthy, savory notes, and adding honey-glazed bacon and spinach turns a simple sandwich into an umami bomb with a sweet side.

Prep
  1. Bake croissants as directed on package; allow to cool for 1 hour before slicing open.
  2. Brush 1 side of warm bacon with honey; cut slices in half hold warm for Assembly.
Roasted Tomato Slices
  1. Add tomatoes, olive oil, salt and pepper to a large bowl; gently mix.
  2. Spread out in 1 layer on greased sheet pan and bake as directed; allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 6 minutes of baking.
Assembly
  1. Spread 1 Tbsp mayonnaise on each cut side of the croissant.
  2. Toast on grill or under broiler until golden brown, approx. 1 minute.
  3. Place bottom croissant piece down and layer on several spinach leaves, 4 Roasted Tomato Slices and 4 pieces (2 slices) of bacon.
  4. Add remaining croissant piece and secure with skewers if desired; serve immediately.
  5. Top with 1 tomato slice, 1 lettuce leaf and remaining croissant piece; serve immediately.

  • Substitute truffle mayonnaise for even more umami flavor or use frisée lettuce or escarole if desired.
