Italian Wedding Cake

Pecans, coconut and rum turn a white cake into an Italian favorite. The cake is topped with a cream cheese icing and pecans. Absolutely amazing!

Cake Batter

Batter
  1. Beat half of the water and all of the cake mix in mixer bowl using paddle attachment on medium speed 2 minutes.
  2. Stop mixer, scrape bowl and paddle; add remaining water and rum.
  3. Mix 2 minutes on low speed then add pecans and coconut.
  4. Mix on low speed 1 minute; deposit 1 lb 2 oz of batter into each of 8 well greased 8-inch round cake pans.
  5. Bake as directed below and allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 14 minutes of baking.
Icing
  1. Mix cream cheese using paddle attachment on medium speed 2 minutes.
  2. Stop mixer, scrape bowl and paddle; add vanilla icing and mix on low speed 2 minutes.
  3. Stop mixer, scrape bowl and paddle; add pecans and coconut and mix on low speed 1 minute.
  4. Keep cool until needed.
Finishing
  1. Place 1 cake layer down and add approx. 10 oz icing to top.
  2. Place another cake layer on top; frost side and top with 19 oz of icing.
  3. Decorate bottom edge of cake with approx. 1 oz chopped pecans.
  4. Pipe 12 rosettes (using start tip) approx. 0.25 oz each, on top of cake.
  5. Add red and green maraschino cherries on rosettes alternating colors.
