Refreshing, rich, tangy lemon cheesecake is easy to serve as luscious dessert bars.

Crust
  1. Empty crust mix into greased or parchment-lined full sheet pan; spread evenly and press down firmly.
  2. Set aside. DO NOT BAKE.
Filling
  1. Place cream cheese in mixer bowl fitted with paddle attachment; mix on low speed until cream cheese is soft, approx. 2 minutes.
  2. Add half of the water (2 1/2 cups) and filling mix; mix on low speed 2 minutes.
  3. Stop mixer, scrape bowl and paddle; add remaining water and mix on low speed an additional 2 minutes or until mixture is smooth and creamy.
  4. Pour mixture over pressed crust and bake as directed below; allow to cool before finishing.
