Low Fat Strawberry Cake

Strawberry gelatin is the key to the bright pink color and the delicate fruity flavor in a simply glazed cake.

Water, hot approx. 120°F

Powdered sugar
1 lb 4.00 oz
4 3/4 cups
Batter
  1. Add cake mix to mixing bow; combine using a wire whisk or rubber spatula until smooth.
  2. Spread batter into a lightly sprayed or parchment-lined full sheet pan.
  3. Bake as directed below and allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 7 minutes of baking.
Glaze
  1. Combine hot water and gelatin powder in mixing bowl; mix well to dissolve gelatin.
  2. Add remaining ingredients and mix well using a wire whisk.
  3. Pour 2 1/2 cups glaze over middle of cooled cake; spread to edges with a spatula.
  4. Allow glaze to set before portioning.
