Mocha Shortbread Cookies

What goes better with coffee than a chocolate cookie with coffee in it! Buttery shortbread is irresistible.

INGREDIENT

Instant espresso powder
3 Tbsp
Water, hot approx. 120°F
2 Tbsp
Butter, unsalted, softened

  1. Dissolve instant espresso powder in hot water in small bowl.
  2. Add cake mix, butter and coffee mixture in mixer bowl with paddle attachment on low speed 3-4 minutes or until dough comes together, is smooth and well combined.
  3. Deposit dough using #40 scoop in 4x6 pattern onto greased or parchment-lined sheet pans.
  4. Place a piece of parchment paper on top of cookies.
  5. Place another sheet pan on top of the parchment-lined cookies, and press down firmly and evenly to flatten cookies to approx. 1/2-inch thick.
  6. Bake as directed below and allow to cool before serving.
