Like a Mississippi mud pie, these sweet scones have a triple dose of chocolate: cocoa with the Gold Medal™ Buttermilk Biscuit Mix, chocolate chips, and a topping of Gold Medal™ Ready-to-spread Chocolate Fudge Icing.

Egg Wash
  1. Beat egg and water in mixing bowl until blended. Set aside.
Dough
  1. Place water, cocoa powder, sugar and vanilla in mixing bowl. Mix with whisk until well blended.
  2. Add biscuit mix and 2 1/2 cups chocolate chips to water mixture.
  3. Stir using rubber spatula, approx. 30 strokes or until soft dough forms. Do not overmix.
  4. Place dough on work surface lightly sprinkled with flour. Roll dough into 3/4-inch thick rectangle approx. 15x18-inches. Use biscuit rails to assist in rolling out to correct size.
  5. Brush top of dough with egg wash. Sprinkle with 1 cup chocolate chips.
  6. Divide dough into (8) 2-inch long strips. Divide each strip into 8 individual scones, approx. 2x3-inches each.
  7. Place on greased or parchment-lined full sheet pans in 4x6 pattern and bake as directed below.

*Rotate pans baked in convection oven one-half turn (180°) after 4 minutes of baking.
Finishing
  1. Place icing in microwave until melted, stirring every 10 seconds.
  2. Drizzle icing over baked scones and allow to set.

  • For faster, easier prep, drop scone dough evenly spaced on greased or parchment-lined full sheet pans.
