Oatmeal Raisin Cookies

It's an old-fashioned favorite with a touch of cinnamon that gets a quick start from a muffin mix.

Raisins, soaked, drained

Quick oats, dry
2 lb 4.00 oz
13 cups
  1. Place brown sugar and butter in mixing bowl with paddle attachment on low speed.
  2. Scrape down bowl when necessary; add eggs and mix 30 seconds on low speed.
  3. Add muffin mix and cinnamon; mix 1 minute.
  4. Stop mixer, scrape bowl and paddle; add raisins and oats mixing 1 minute longer on low speed. DO NOT OVERMIX.
  5. Deposit dough using #30 scoop in 4x6 pattern onto parchment-lined full sheet pans.
  6. Bake as directed below and allow to cool before serving.
