Pear Cream Cheese Coffee Cake

Subtle pears bring a fruity sweetness to a moist and delicious coffee cake topped with pecan streusel.

Coffee Cake Batter

Cream cheese, softened

Vanilla extract

Lemon zest

Water, cool approx. 72°F

Pears, fresh, peeled, diced

Streusel Topping
  1. Mix streusel topping ingredients in mixer bowl using paddle attachment on low speed 2 minutes or until crumbly texture is formed.
  2. Set aside.
Batter
  1. Mix cream cheese, vanilla and lemon zest in mixer bowl using paddle attachment on medium speed 2 minutes or until fluffy.
  2. Add water slowly while mixing on low speed.
  3. Stop mixer, scrape paddle and bowl.
  4. Add muffin mix and mix on low speed 1 minute.
  5. Add pears and mix on low speed 1 minute.
  6. Deposit 9.5 lb batter into each lightly greased full sheet pan; spread evenly.
  7. Sprinkle 3 lb 12 oz streusel evenly over each full sheet pan and bake as directed below.
