Peruvian Empanada

Biscuit dough envelopes a magnificent chicken mixture with chili powder, garlic and jalapeños.

Hard boiled eggs, chopped

Green olives, chopped

Soy sauce

  1. Place biscuits on sheet pan; thaw at room temperature for 1-2 hours, until completely thawed.
  2. Pulse chicken in food processor until fine, approx. 5 seconds.
  3. Sauté onions in olive oil over medium high heat until translucent.
  4. Add chicken and all other meat filling ingredients except for soy sauce and cilantro.
  5. Sauté until all ingredients are well combined and warm, approx. 3-4 minutes.
  6. Place sautéed mixture into a bowl and add soy sauce and cilantro, stirring until fully incorporated.
  7. Roll out each biscuit on a generously floured surface until disc is approx. 4-5 inches in diameter.
  8. Place filling using a #30 scoop on center of each rolled out biscuit.
  9. Fold over each biscuit, enclosing the filling and crimp closed with a fork.
  10. Place empanadas in a 4X4 pattern on a greased or parchment-lined full sheet pan.
  11. Brush each empanada with a light amount of egg wash and bake as directed below.
