Red Eye Gravy

Try a southern tradition -- a gravy that combines pan drippings with coffee.

Bacon slices, raw

Water, cold approx. 50°F

Coffee, brewed

Grease, reserved from cooking bacon

  1. Cook bacon in skillet until brown. Drain and reserve bacon grease.
  2. Chop bacon into medium-size pieces; set aside.
  3. Combine gravy mix and 1 1/2 cups of the water in mixing bowl. Stir with a wire whisk until lumps are dissolved.
  4. Bring remaining water and brewed coffee to a boil in a heavy sauce pan.
  5. Add dissolved gravy and water mixture to the sauce pan. Whisk until well blended and sauce thickens, about 1 minute then remove from heat.
  6. Stir in bacon grease and cooked, chopped bacon until well blended.

  • For a smoother sauce, use the cooked bacon for other uses and only add the bacon grease to the sauce recipe.
