Savory Sweet Potato Granola Gratin

Earthy sweet potatoes, sautéed leeks, maple syrup and thyme blend with a topping of Nature Valley™ granola, cherries and almonds to create a tasty side dish.

Butter, unsalted, softened

Topping
  1. Add granola, parmesan, almonds, cherries, butter and thyme to large mixing bowl.
  2. Mix together with spatula until butter is incorporated into the other ingredients; set aside until needed.
Filling
  1. Heat oil in large skillet over medium high heat; add leeks and cook 2-3 minutes.
  2. Add thyme, chicken broth, maple syrup, vinegar and salt; cook 1 minute.
  3. Arrange 3 lb sliced potatoes into 6, sprayed half hotel pans.
  4. Evenly pour in approx. 2 cups (12 oz) leek mixture per pan.
  5. Toss lightly with spatula and cover with foil; bake as directed below until potatoes are al dente.

*Rotate pans baked in convection oven one-half turn (180°) after 5 minutes of baking.
Finishing
  1. Remove foil and evenly distribute 6 cups (17 oz) topping per pan.
  2. Return (uncovered) to oven and bake as directed below until internal temperature reaches 135°F and top is browned.
  3. Serve 1 warm, #6 scoop (6.5 oz) per portion.
