Tofu Breakfast Sandwiches

Marinated, seared tofu is topped with Cheddar-style cheese, guacamole, tomato and spouts is served between an crispy everything bagel seasoned biscuit for a delicious breakfast sandwich.

Prep
  1. Place frozen biscuits on parchment-lined half sheet pan.
  2. Brush with water and sprinkle seasoning over biscuits; bake and hold warm.

*Rotate pans baked in convection oven one-half turn (180°) after 10 minutes of baking.
Tofu
  1. Add soy sauce, garlic powder and turmeric to a shallow pan; mix well.
  2. Slice pressed tofu into 1.75 oz pieces; place into pan and coat both sides.
  3. Allow to marinate 4-8 minutes.
  4. Add olive oil to sauté pan and preheat to medium-high heat; add 2 pieces of tofu, cooking 2-3 minutes.
  5. Turn tofu over, top each piece with 1/2 cheese slice and allow to cook an additional 2-3 minutes.
  6. Remove from pan and keep warm for Assembly.
Assembly
  1. Split warm biscuits in half; spread approx. 1 Tbsp guacamole on each biscuit piece.
  2. Place 2 Tofu pieces on bottom half of biscuit; add 1 oz sliced tomato and 0.5 oz sprouts.
  3. Top with remaining biscuit piece; serve immediately.
