Vanilla Bean Panna Cotta with Mango Glaze

In a twist on the Italian custard, yogurt is folded into heavy cream and topped with delicate mango.

Vanilla beans, split length-wise, seeded

Granulated sugar

Mango Glaze
INGREDIENT

Plain gelatin powder
1 1/3 Tbsp
Water, cold approx. 50°F

Mango puree
1 lb
2 cups
Granulated sugar
2 oz
1/4 cup
Macerated Strawberries
  1. Place strawberries and sugar in mixing bowl and stir well to coat berries. Refrigerate until needed.
Panna Cotta
  1. Soften gelatin in water in small bowl 5-10 minutes. Set aside.
  2. Heat cream, vanilla beans, sugar and salt in medium saucepan over medium heat, stirring constantly to dissolve sugar. Do not simmer.
  3. Remove from heat and discard vanilla beans.
  4. Add gelatin mixture to cream mixture, blending with whisk quickly until well combined.
  5. Allow mixture to cool to 100°F, then stir in yogurt.
Mango Glaze
  1. Soften gelatin in water in for 5-10 minutes. Set aside.
  2. Place mango puree and sugar in small saucepan and heat to just warm.
  3. Remove from heat. Add softened gelatin to mango puree, blending with whisk quickly until well combined.
  4. Fill squeeze bottle with mango glaze and set aside.
Assembly
  1. Spoon 0.5 oz strawberries into 2 oz shot glasses.
  2. Add 1 oz panna cotta mixture and refrigerate 1-2 hours or until set.
  3. Top firm panna cotta with mango glaze and refrigerate until ready to serve.
